Zucchini Fritters

Ingredients:

Zucchini – 2 medium size shredded ( 2 cups ) Carrot – 1 medium size ( shredded)

Chickpea flour- 1/2 cup

Rice flour – 1/3 cup

Salt as per your taste

Black pepper- 1/2 tsp

Coriander leaves- chopped handful

Raisins- 1/3 cup or less if you don’t like them

Chickpeas – 1/4 cup Mashed

Mons Flavors Freedom Spice Blend – 1tbsp

Oil for shallow frying

Zucchini Fritters with their crispy outside, soft inside and with all that vege goodness. I always get too late to post due to my workload but these seem to be very popular on my stories as I get lots of messages. Zucchinis are going to be available soon at a very low price so let’s make the most of it. These are so quick and easy to make. Handful ingredients which you normally have in your pantry and your 10 minutes max in the kitchen and this super delicious treat is ready for you .

Method:

In a large bowl, add shredded zucchini, carrot, mashed chickpeas, coriander leaves, salt, pepper, Freedom spice mix, raisins and mix all together.

Then add your chickpea flour, rice flour and mix well until combined properly. Don’t add extra water as water from the zucchini itself should be enough. If you think it’s not binding then can add more chickpea flour but little bit at a time.

Heat your ironclad pan with sufficient oil and make sure it’s on very low medium temperature

Flatten the dough on the palm of your hand and add your fritters to the pan. Cook for 2 minutes and flip to the other side and cook for another 2 minutes. Press from the middle with the help of a spatula to make sure it gets cooked thoroughly.

One by one keep putting these on a paper towel to dry excess oil .

Once done serve it with Coconut cream dipping and Corriander Chutney.
