Wholesome Comforting Millet Khichdi

Ingredients:

1 cup pearl millet (cooked)

2 tablespoon olive oil / ghee

2 teaspoon cumin seeds

3 garlic cloves (minced)

1 inch ginger (julienne)

1 cup peas

1/2 cup corns

2 teaspoon dish delicious blend

2 tablespoon lime juice

coconut cream 400 ml

1/2 cup warm water

2 tablespoon coriander leaves finely chopped

salt & pepper according to your taste

FOR TOPPING

Stir-fry oyster mushrooms

avocado oil

Dukkah spice blend

Micro greens

 

Millet Khichdi Recipe

A warm bowl of millet khichdi gives comfort to me any day. In every Indian home khichdi recipe would be everyone’s favourites as it’s easy to make and moreover its one of the most healthiest superfood you can enjoy having every day. I love making this dish in various ways, especially with millet grain, adding millets makes this dish rich in iron, and calcium, high in fibre and adds many essential vitamins and minerals at the same time. Adding additional vegetables adds more nutritional value to this dish and makes a perfect wholesome meal for the upcoming winter. This dish is gluten-free, vegan and helps maintain a good diet. Method:

Wash and rinse millets 2,3 times under running tap water

In large pan, add 4cups of water, boil it and then add washed millets, cook until millets gets fluffy. Use a fork to keep stirring in between the boiling process, you can even add 1 teaspoon olive oil so that it doesn’t get sticky. Once millets are cooked, drain the excess water and transfer millets in a colander. Rinse under tap cold water so that you can stop the process of over cooking millets. leave it aside until you start your next process.

In a large wide pan on a low medium heat add olive oil, once the oil is hot add cumin seeds, let these seeds splutter then add minced garlic Sautee it for few seconds then add, thawed peas and corns mix well.

Add dish delicious spice blend, salt and pepper to taste, cook for 1minute until you get an aroma coming through, add lemon juice mix well again

Add coconut cream, 1/2 cup water, stir and then add cooked millet, mix everything together. let it cook for 2, 3 minutes until everything gets infused and cooked well.

You can add more water at this stage if you feel you need this dish to be bit more soupy, saucy or runny

Adjust salt, lemon and pepper according to your taste

Once done add fresh ginger julienne and chopped coriander mix well.

Garnish it with handful micro greens, drizzle of avocado oil, dukkah spice blend and enjoy

Notes:

You can add additional vegetables to this recipe, roasted pumpkin, spinach leaves, broccoli, beans, carrots.

If you are vegan just don’t add ghee

I used Fia Fia coconut cream in the recipe

You can buy millets from BinInn or any Indian store I used hulled millets for this recipe

I used frozen peas and corns for this recipe

I cooked oyster mushrooms with Freedom spice blend, olive oil, and salt
