Ingredients:

  • Carrots – 2 medium size ( peeled and grated )
  • Spinach – 1 cup ( Chopped finely )
  • Cauliflower- 1/2 cup Grated
  • Green chillies- 1/2 chopped fresh
  • Garam masala – 1 tsp
  • Dish delicious- 1teaspoon  spice blend
  • Salt according to your taste
  • Coriander leaves- 1/4 cup
  • Nuts of your choice- 1/3 cup
  • Chickpea flour- 1/2 cup ( for binding)
  • Water to bind the mixture ( accordingly 2tbsp or depends )
  • Oil for frying

Let’s make these Vegetarian koftas today which are super flavorful. These make a good party snack or appetizer or make a delicious base of Curry Masala. They can and also be presented as your main dish or smash them into a flat shape and add into your wraps. These are packed with nutrients, full of flavors, the outer layer is really crisp while inside is soft and melts in your mouth. Hope you enjoy making this easy recipe for your family and friends

Method:

First wash your veggies grate them according to your instructions. Squeeze excess water from the carrots and leave it on the side. Use it to bind the mixture.

Take the grated vegetable mixture in the bowl, add all the mentioned ingredients above. Give a good mix .

Then add Chickpea flour, juices from vegetables if any, if not then add water and start mixing the mixture into a medium soft texture. Making sure it shouldn’t be too hard or too soft.

Mix very well. Make small to medium size balls from this veggie mixture.

Heat oil for deep frying in a pan. Fry these koftas until they are golden brown.

Make sure you cook them on medium heat not on high otherwise they won’t get cooked from inside .

Enjoy these with any chutney. I love having these with tamarind chutney and yogurt.
