Ingredients:

2 Cups – Cooked basmati rice

1 Teaspoon – Cumin Seeds

1 Tablespoon – Ginger julienne

1 Teaspoon – Turmeric powder

7, 8 – Curry Leaves

1 Tablespoon – Dish Delicious Spice Blend

2 Tablespoon – Oil / Ghee

1Teaspoon – Lemon juice

1/3 Cup – Beans of your choice (I used Tin)

1/3 Cup – Peas, Corns (Frozen & Thawed  )

Salt as per your taste

2 Tablespoon –   Coriander leaves finely chopped

Nuts – Peanuts, walnuts, Cashewnuts ½ cup mixed (optional)

This quick and easy healthy lemon rice is a slightly healthier version of the authentic turmeric lemon rice that you would eat in an Indian home as I have added extra beans; nuts and vegetables that will make this dish a wholesome meal. This healthy aromatic rice dish is ideal for any season, adds sunshine with anti-inflammatory turmeric and adds a flavourful punch through Dish delicious blend. 

This recipe takes hardly 15minutes to make and works great as a main meal or served as a side dish. I swap grated cauliflower someday with rice to give another twist to my menu. This Turmeric lemon rice is so versatile dish that can be made either with fresh cooked rice or with leftover rice.  Adding Dish Delicious to this recipe is a great way to transform your ordinary tasting rice to a completely new dish with minimum effort. Method:

1 – Pre-soak rice for overnight or minimum two hours (wash , Soak and Cook )

2 – In a pan add oil/ghee on low medium heat, add cumin seeds, curry leaves, let it splutter for few seconds, then add turmeric powder, Dish delicious blend, salt and mix well.

3- Add mixed beans, peas, corns, mix well with spices and cook for 2, 3 minutes on low medium heat.

4 – Add, peanuts, walnuts, and cashew nuts. Give a good mix. Don’t overcook it or burn the nuts.

Nuts are optional you can skip this part if you are allergic to nuts.

5 – Add your cooked rice; mix everything together with light hands making sure spices and vegetables are well incorporated with rice.

6 – Once everything is mixed add ginger julienne, lemon juice, chopped coriander leaves, toss well and serve it with Raita  ( Indian palate cleanser )

Notes:

Make sure when you add dish delicious blend your flame should be low medium heat as you don’t want spices to be burnt.

You can add chicken, prawns, cauliflower carrots, peas, potatoes to this recipe.

I personally like to drizzle lemon pepper infused avocado oil for extra punch in this recipe.

You can serve this rice with fish, chicken, vegetables or pair it with favourite curry

You can roast nuts and seeds separately and then start cooking this rice dish.
