Tapioca fritters

Ingredients:

1 Cup Sago tapioca pearls

2 Medium size Potatoes boiled & mashed

1/4 Roasted coarse peanuts

1/2 Teaspoon grated ginger

1 Teaspoon lemon juice

Himalayan pink salt as per your taste

1/4 Teaspoon Black pepper

1/3 Cup Cranberries

2 Teaspoon Dish delicious blend

Coriander leaves chopped

Oil for frying

Tapioca fritters are crispy, crunchy and a very easy snack recipe that is made effortlessly. Its a very popular snack served in India by the name of Sabudana Tikki specially when people are fasting as it contains high amount of carbohydrates and it also makes a fast energy booster snack. I love making these as cocktail snacks for my parties and they are so popular among my friends. Its a delicious recipe by using minimal ingredients

Method:

Rinse tapioca 2-3 times and drain all the water, then soak pearls in water for 2-3 hours until pearls get double in size and gets easily mashed when you press them between your fingers. Once it reaches that stage drain water and let it stay in colander for at least 15 minutes until water drains out completely.

In a medium size bowl add boiled potatoes, tapioca pearls, coriander leaves, cranberries, dish delicious blend, salt , pepper, roasted peanuts grated ginger and mix them together and make a firm dough. No need to add water as pearls should still have moisture in them which will lead it to bind this batter well.

Make small fritters of this mixture, using your palm, if the dough gets bit sticky in your hands apply some oil on your palm, it works great.

Make medium size fritters and keep them on side

Heat oil over medium flame and once oil is hot enough, carefully side fritters in the oil and deep fry until crispy and golden brown in color

You can shallow fry and bake them as well

When shallow frying make sure heat is on very low medium so that it gets cooked through and if baking, bake them on 160 degree for at least 10,15 minutes turning them after every 5 minutes until they are baked

Use these as your burger patties or break them into your salad to add extra crunch to your meal or enjoy as snack with coriander mint chutney or any dip you prefer

Notes:

  • Tapioca pearls can be bought from any Indian store, its called SABUDANA and make sure buy big ones not small ones.
  • You can add seeds to this recipe like hemp seeds, sesame seeds, chia seeds , pumpkin seeds to add more value to this recipe
  • Sabudana (Tapioca pearls) have neutral flavor and it also adds texture to breads , soups, fritters without affecting the taste.
  • Sabudana pearls is high in calcium, magnesium and iron and its gluten free and is a non allergic pearl. anyone can have sabudana as it does not cause any allergy
  • Sabudana pearls is very low in cholesterol makes great pre and post workout meal
