Spinach Kale Pakoras

Ingredients:

250 grams spinach leaves (rinsed and chopped in halves)

250 grams kale leaves (2cups)

1 cup chickpea flour (Besan)

2 tablespoon rice flour

1/2 teaspoon turmeric powder

1 teaspoon mango powder

1/2 teaspoon black pepper

1/2 teaspoon cumin powder

2 red onions ( Thinly sliced )

mustard oil or regular oil for frying

1/2 cup water

Crispy Spinach Kale pakoras is an Indian style snack dish which are crispy, healthy and easy to make. Pakoras dipped in a spiced batter and then fried are hugely popular snacks in the Indian sub- continent. In India you will find these served at every second street stall selling them with various chutneys and with hot masala chai. I love adding kale as this adds healthy goodness and beautiful shape and crispiness to this recipe. I love serving these for every celebration we have in our house.

Method:

Combine all the ingredients in a deep bowl, adding just enough water to make a batter but pourable consistency, if your batter is too thick you may likely end up having uncooked pakoras from inside and they wont be crispy  either.

Heat oil in a deep non stick or cast iron wok, drop batter with the help of table spoon, cook pakoras on medium-high heat from all sides until they turn golden brown and crispy.

Once cooked transfer pakoras on parchment paper to soak excess oil.

Serve these with coriander mint chutney, tomato sauce or siracha

Notes:

  • TIPS
  • You can also add Dish delicious blend to add some additional flavors
  • Make sure fry 2, 3 pakoras at a time otherwise they wont get cooked evenly if they are cramped all together while frying.
  • You can add sliced potatoes, cauliflower florets, sliced eggplant if you need a bit of change.
