Spiced Roasted Carrots

Ingredients:

500 Medium baby carrots (scrub & clean)

3 Tablespoon lemon juice

5,6 Shallots (peeled and cut in halves or quartered if large in size)

Himalayan pink salt (adjust to taste)

1 1/2 Tablespoon Freedom spice blend

1/2 Teaspoon Pepper

1 Teaspoon lemon juice

1/4 Almond flakes

1/4 Hemp seeds

Add gorgeous color to your plate with this flavorful sweet, nutty roasted carrot and shallot dish. This is a simple way to serve carrots in a very flavorful way. Roasted carrots tossed in olive oil, flavored with freedom spice blend served with almonds, hemp seeds makes this recipe a great side dish or prefect to be served as lunch. This roasted carrots takes just few minutes to put together made with only handful ingredients. Its a win win recipe for any day to impress your family and friends. Method:

Preheat the oven 180 C

Trim green top off the carrots, peel shallots skin

Spread carrots and shallots into roasting tray, drizzle olive oil, freedom spice blend, lemon juice, Himalayan pink salt, pepper

Coat carrots and shallots with the spice blend, adjust salt and pepper according to your taste

Roast about 15 minutes until carrots are tender and exterior looks slightly caramelized

Flip the carrots over and return to the oven for further 15 minutes until carrots slightly gets wrinkled and gets darkened from all ends

Once done place the roasted carrots on to a serving plate or serving dish

Layer on the carrots dip (carrot dip recipe is on my website) or with beetroot hummus

Drizzle some lime and pepper infused avocado oil

Sprinkle some almond flakes, hemp seeds and serve warm

Notes:

  • Freedom spice blend can be used as a dry rub for roast chicken
  • Great when tossed with sautéed vegetables
  • Sprinkle over toasted nuts and tossed in some olive oil
