Ingredients:

3 tbsp. olive oil

1kg chicken thighs, skin on and bone in

½ head cauliflower (550g-600g), cut into florets

1 large onion, halved and sliced 2mm

5 cloves garlic, finely chopped

2 tbsp. Mon’s Flavors Freedom Spice Blend

1 tsp salt

1x400g can tomatoes

2 tbsp. tomato paste

50g dried apricots, diced

Spiced Chicken and Cauliflower Stew

Chicken stew with cauliflower sounds so delicious already! It doesn’t get more comforting than this right ? I often get request for meat recipes using my blends but since I went vegetarian 7 years ago never felt comfortable creating anything around meat but also wanted my meat lovers to create something exceptional using my blends so my friend Olivia who is a recipe creator from Taupo New Zealand helped me creating this recipe, even though I don’t eat meat anymore I asked her to create something similar to what I used to enjoy before. This recipe its rustic, hearty and comforting meal. This chicken stew reminds of my childhood as my grandfather used to cook similar kind of dish using vegetables and apricots. I can totally vouch on these flavors and I am sure you will enjoy cooking this dish for your family and friends.

Method:

Heat oil in a large, wide cooking pot over high heat. Add chicken and cook for 10 minutes, flipping halfway, until nicely browned and the skin is crisp. Transfer the chicken to a plate and keep the oil in the pan.

Reduce heat to low and add cauliflower, onion and garlic. Cook until the onion begins to soften, about 3 minutes. Add Freedom Spice blend, stir to coat, and continue to cook for an additional 3 minutes.

Add Freedom Spice blend and salt, and stir to coat. Cook for an additional 2-3 minutes.

Add tomatoes, tomato paste, dried apricots and 2 cups of water. Bring to a boil, then reduce heat to a simmer and add chicken thighs, skin facing up.

Simmer for 1 hour, turning chicken halfway, until the chicken is cooked through and the sauce has thickened.

Serve with crusty bread, rice or mashed potato.

Notes:

2 tablespoon freedom spice blend is according to my taste, if you don’t like too strong flavors then just choose to add less blend

Add spinach or red kidney beans if you want to add additional flavors to this dish

You can transform this recipe into a vegetarian dish,  choose cauliflower, broccoli, kumara, peas, potatoes  instead meat

Timings may vary when it comes to cooking vegetarian dish

If you want bit more exotic flavors add some garam masala

You can freeze this finished dish and surprise your family with a delicious home cooked meal

Spiced Chicken & Cauliflower stew

Really nice but I would use almost double/triple the amount of freedom spice to get the flavour stronger, I added a bit of chicken stock, brown sugar and splash of Worsester sauce, to make it tastier. The photo here looks as though this is baked or finished off in an oven as mine didn’t have this charred look at the end. The apricots were a nice little surprise and the cauliflower was my favourite in it. Think next time I’d use just veges.

Hi Catherine,
Thank you so much trying this recipe, I have to say you love that spiciness and that bite to the dish, I have a very moderate palate, so this recipe is according to that. I didn’t put this in oven for that charred look but yes you can do so. I will try adding your ingredients next time when I make this dish as this is my sons favourite and he loves it with apricot and cauliflower. Just an additional way to add more depth and nutrition value to the meal.
