Method:

Preheat your oven to 180°C (350°F).

In a large skillet or frying pan, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.

Add the baked beans (including the tomato sauce) to the skillet. Stir in the Freedom Spice Blend and Dish Delicious Spice Blend.

Simmer the mixture for about 5-7 minutes, allowing the flavours to blend together, Stir in the lemon juice and adjust the seasoning according to your taste preference.

Transfer the baked beans mixture to a baking dish or individual ramekins, or leave it in the same pan if its Cast iron pan, creating wells in the mixture for the eggs.

Carefully crack the eggs into the wells you created in the baked beans mixture.

Place the baking dish or ramekins in the preheated oven and bake for approximately 15-20 minutes, or until the eggs are cooked to your desired level of doneness.

Once cooked, remove the dish from the oven and garnish with fresh coriander leaves and serve it hot with crusty bread.

Notes:

This recipe is versatile, and you can add other ingredients like cooked bacon, diced bell peppers, or grated cheese for additional flavour and texture.
