Savory Masala Oats Breakfast

Ingredients:

  • Rolled oats – 2 cups
  • Onions – Chopped finely
  • Turmeric powder- 1/2 tsp
  • Red chilli powder- 1/2 tsp ( optional) Kashmiri
  • Cumin seeds – 1tsp
  • Salt to taste
  • Lemon juice – 2tsp
  • Tomato puree – 1/3 cup
  • Ginger julienne – sliced in small lengthy pieces
  • Water – 4 cups
  • Olive oil – 2tbsp ( cooking olive oil )
  • Fresh Chopped Corriander leaves – 2tbsp
  • FOR TOPPINGS ( OPTIONAL)
  • Edamame beans- 1/4 cup
  • Corns – 1/4 cup
  • Spinach leaves – 1/2 cup roughly chopped
  • Avocado oil – Drizzle
  • Hemp hearts – 2tsp
  • Coconut Yogurt – 2tbsp

Somedays I love switching myself to savoury at the start of the day. Breakfast Masala Oats is one of the healthiest meals you could ever think of. This could make a great lunch too. It’s Healthy, delicious, Vegan Gluten-Free and definitely a healthy start for any day. Love adding my Indian style and then adding some Continental touch to this Recipe takes this to another level.

Method:

  1. Heat oil in a Non stick pan , add cumin seeds and let it change its color .
  2. Add onions, ginger and mix well until the onions gets bit translucent and pink in color
  3. Add Tomato puree , salt , turmeric powder, red chilli powder, and cook for 2 or 3 minutes on low medium heat .
  4. Add Rolled oats ,with adding 4 cups of water and cook for 5 to 6 minutes with lid on top . You can add water according to your liking .
  5. Once done add lemon juice, corriander leaves and serve.
For toppings
I stir fry edamame spinach , Corns in 2 tsp olive oil , with salt , black pepper , red chilli powder .
Served it with crunchy veggies, drizzle of avocado oil , Coconut yogurt
You can also add nuts of your choice. I added some HEMP HEARTS
