Roasted Cabbage wedges served on wholesome nutritious millet khichdi

Ingredients:

I large cabbage

1/3 cup olive oil

3 garlic cloves ( freshly crushed on Mortar & pestle)

2 teaspoon freedom spice blend

1 tablespoon dish delicious spice blend

1 tablespoon fennel seeds

1 tablespoon lime juice

salt & pepper according to your taste buds

 

Roasted cabbage recipe

This easy roasted cabbage is deliciously spiced and seasoned with freedom spice blend and dish delicious blend makes a perfect meal of all kinds. You can serve this as side dish or pair it with delicious millet khichdi and make it a scrumptious main meal. Best part of this recipe is that it requires minimal prep and the result is tender, crispy, restaurant- worthy Flavours in no time. After making this flavorful cabbage recipe I am sure you will never eat a boring cabbage meal ever. This can be a perfect meatless main course, paired with any masala sauce. Method:

Preheat oven to 240 degree

Cut cabbage into quarters through the core not going to the end of the roots, so that each wedges stays together. You can create as many wedges as you want depends on the size of your cabbage.

To prepare a marinade for cabbage wedges, in a bowl  add olive oil, freedom spice blend, dish delicious blend, salt, pepper, lime juice, fennel seeds, crushed garlic mince and  mix well. Adjust seasoning according to your taste if you want.

In a roasting tray place cabbage wedges keeping them an inch apart as they will tend to loosen a bit while roasting process so keep that space, now with the help of a brush or use your hands and apply the marinade on the  both sides of cabbage cavities.

Roast it on 180 to 200 degrees for 20 to 25 minutes until you see cabbage getting brown and crispy, turn the cabbage upside down in the mid of roasting to cook it evenly.

Once cabbage is done, either you can serve it as side dish or serve it on the millet khichdi as you see in the image above.

Drizzle some avocado oil, truffle olive oil and sprinkle some dukkah spice blend and enjoy this feast

Notes:

In the marinade you can add maple syrup as well, that will give a nice caramelize touch to this dish

I squeezed 1 lime juice in the marinade and while roasting I roasted lime skin and that gives a fantastic touch to this recipe.

No waste recipe and at the same time beautiful flavors when you squeeze that roasted lime on top of the roasted cabbage along with avocado oil.

You can chop the skin and add that as a garnish on top as well if you enjoy unique flavors

You can drizzle some yogurt dip, green chutney or pesto when serving roasted cabbage.

You can grate some parmesan cheese if you love cheese.
