1/2 cup Fresh Coriander (Cilantro), chopped
1 onion, diced (white onion)
3 garlic cloves, minced
3 tablespoons Olive oil
2 1/2 teaspoons Dish Delicious Spice Blend
1/2 cup Coconut cream
4 cups Water
1 tablespoon lemon juice
Salt and black pepper to taste

Preheat your oven to 220 C
 In a large roasting tray, place the broccoli florets and diced onion. Drizzle with olive oil and sprinkle the Dish Delicious Spice Blend over the vegetables. Add minced garlic cloves to the tray as well.
 Toss the vegetables together until evenly coated with oil and spices. Spread them out in a single layer for even roasting.
 Roast the vegetables in the preheated oven for about 20-25 minutes, or until they are tender and slightly charred. Stir or flip them once during the roasting process to ensure even cooking.
Remove the tray from the oven and let the roasted vegetables cool slightly.
 In a large pot, combine the roasted broccoli, spinach leaves, and fresh coriander. Add coconut cream and water to the pot.
Place the pot over medium heat and bring the mixture to a gentle simmer. Allow it to cook for about 10 minutes, or until the vegetables are very soft.
 Using an immersion blender or a regular blender, puree the soup until smooth and creamy. If using a regular blender, blend in batches and be careful when handling hot liquids.
 Return the blended soup to the pot and season with salt and black pepper and lemon to taste. Stir well to combine and heat the soup over low heat until warmed through.
 Once heated, remove from heat and serve the roasted broccoli soup hot. Garnish with additional fresh coriander if desired.


You can customize the spice blend according to your preference. Feel free to add or adjust the spices to suit your taste.
For a thicker soup, reduce the amount of water or increase the amount of broccoli.
 If you prefer a dairy-free option, you can substitute the coconut cream with unsweetened almond milk or cashew cream.
