Roasted Asparagus and potato salad

4,5 Potatoes, cut into length sized pieces

1/2 bunch fresh asparagus, tough ends removed

6,7 Strawberries

2 Tangelos peeled and cut in small pieces

1 Teaspoon turmeric powder

2 Teaspoon Garam masala Mons flavors spice blend

1 Teaspoon black pepper

Himalayan pink salt

2 Tablespoon olive oil



1 Cup coriander leaves

10,12 Mint leaves

1 Table spoon lemon spoon

2 Tablespoon olive oil

1 Teaspoon Raw sugar or maple syrup

Salt according to your taste

This oven roasted asparagus and potato dish, tossed in an insanely easy and delicious coriander- mint dressing then topped with fresh New Zealand strawberries and tangelos to mix up is a great way to eat summer produce meal. Preheat oven  to 240 degree

Line a large baking sheet and spread potatoes evenly, season it turmeric powder, salt, olive oil, garam masala, pepper, mix everything together.

Bake for 20 to 25 minutes until potatoes are almost cooked.

Then in the last go pull out the tray and add asparagus on top, drizzle some oil and roast for further 5,6 minutes along with potatoes until asparagus gets bit tender

Make your dressing mean while

Add all the ingredients together in a blender blend until thick consistency.

Keep the consistency bit coarse goes well with the dish, adjust salt , sugar and tangy flavor according to your taste

Serve potatoes, asparagus in a serving bowl, pour dressing on top.

Add some chopped strawberries and tangelos

Give a gentle toss, serve nd enjoy
