Red Kidney Beans Curry

Ingredients:

400 grams Red kidney beans (In brine)

1 red onion (finely chopped)

2,3 Cloves (finely grated)

1 teaspoon ginger paste

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 tablespoon Freedom spice blend

3 tablespoon olive oil

1 1/2 cups (Can whole tomatoes) Blended in form of puree

1/2 cup water or vegetable broth

Salt and freshly ground pepper as per taste

Coriander leaves for garnish

Red kidney beans is a healthy, nutritious meal and often cooked in various ways all over the world. I love making kidney beans once a week and this is my favorite way of cooking. This dish is very flavorful and aromatic as freedom spice blend adds a punch of flavors to this recipe. Adding this blend literally lessens your time in kitchen and at the same time makes this dish a flavorful, comforting vegetarian meal and really satisfying when it comes to flavors. Method:

Add olive oil in a large heavy bottomed pan on a low medium heat

Add cumin seeds, let them splutter for few seconds then add chopped red onion and sauté until it turns pink in color

Add tomatoes, mix well then add freedom spice blend, salt , pepper, turmeric powder  mix again for about 3,4 minutes keeping heat on low medium at this stage sauté until oil starts separating from sides add red kidney beans with along with its water and 1/2 cup of water ,cover it with a lid and cook further for 10 minutes until gravy gets thicker in consistency. Add more water if needed

Once done add a generous amount of ghee, if vegan add coconut cream or vegan butter

Sprinkle some coriander leaves and serve it hot with rice or pita bread and enjoy

Notes:

  • I used pams red kidney beans in brine for this recipe
  • If you want this recipe to be creamier like restaurant then add 1/2 cup coconut cream
  • If you want sauce to be more smooth, you can blend the masala in a blender  without red kidney and once the sauce is smooth then add red kidney beans and cook further in sauce adding more  water only if needed then finish off with rest of the steps as mentioned above
  • I love adding ghee for good reasons but you can skip this part if you don’t like ghee, add butter instead
