Potato Chickpeas Spinach in Yogurt Gravy

Ingredients:

2 cup natural yogurt

5,6 small size potatoes (washed peeled & cut in halves)

400 grams chickpeas (In brine)

1 onion ( finely chopped )

2,3 garlic ( minced )

1 inch ginger (finely grated)

2 tablespoon olive oil

1 1/2 teaspoon cumin seeds

1 1/2 teaspoon turmeric powder

1/2 teaspoon red  chili powder (optional)

1 1/2 teaspoon dish delicious blend

1 1/2 teaspoon freedom spice blend

salt and pepper to taste

1 1/2 cup water

250 grams baby spinach leaves

coriander leaves for garnish

potato chickpea spinach yoghurt curry

This yogurt based potato recipe is my all time comfort food, I remember this dish was always cooked by my grandfather and was very popular among our family meals .This dish is very much loved by Himalayan people. It is a quintessential part of Himachal culture to serve potatoes, chickpeas simmered in spiced yogurt sauce and if you ever travel to my home town Kullu (Himachal Pradesh) you will always find this dish served to you in various ways. Best part of this recipe is its very budget friendly and so easy to prepare with minimal ingredients when you have nothing much in your fridge. This recipe never fails to impress any ones taste buds. Method:

In a large bowl, add yogurt, turmeric powder, dish delicious blend, freedom spice blend , red chili powder (but its optional) you might want to add red chili  if you want your dish to be spicy , give yogurt a good mix  for a minute with a whisker until  it comes to a creamy texture, keep aside.

On a low medium heat, add oil in a large pan , add cumin seeds and let the seeds splutter.

Once seeds starts to splutter, add finely chopped onions, sauté until  onions are translucent and pink in color . For this recipe particularly  I  sauté  onions little bit on brown side as it gives a flavorful bite when you have this dish. Don’t over burn onions though it will taste bitter in that case.

Once onions are slightly brown in color add garlic and ginger, sauté for 1 minute.

Switch off the heat and transfer yogurt quickly, mix well , once its mixed  switch on the gas and cook the yogurt mixture for about 1 minute, don’t panic if it splits a bit , it pretty normal but it shouldn’t spilt entirely then its a worry. To avoid yogurt splitting read the notes for do’s and don’ts .

After 1 minute of stirring  yogurt now add potatoes, chickpeas and water , mix well cover with the lid and cook for another 5,6 minutes on low medium heat until potatoes are cooked well. You can use  pre boil potatoes to save time.

Once yogurt gravy is thickened, potatoes are cooked and  gravy is reduced add salt, spinach , mix well . cook further for 1-2 minutes until spinach is mixed and cooked leaves.

Remove from the heat and stir in the chopped coriander leaves.

Serve it warm with steamed rice or pita bread and enjoy !

Notes:

When you are making this dish few things need to be kept in mind

When you pour yogurt in the pan after sautéing onion garlic and ginger, make sure you switch off the gas completely .

leaving heat turned on while pouring yogurt mixture , its very much possible that yogurt will split and it will be hard to make this dish in a smooth consistency. once the yogurt is mixed is in the pan, mix well and now you turn back your gas on low medium heat and then proceed with the next step

Another important note, don’t add salt in yogurt or while frying onions as it will again lead to splitting the yogurt

If you think you wont be able to get the consistency right you can add 1 tablespoon chickpea flour in the yogurt mixture , It will help yogurt from splitting

You have to add salt and pepper in the last step when you are adding spinach .

You can use boiled potatoes as well
