Peanut Butter Cookies

Ingredients:

1 Cup whole meal flour

1 Cup peanut butter

1/2 Cup Coconut sugar

1 teaspoon baking powder

1 teaspoon lemon essence

1/4 cup water

1/4 cup chocolate chips

pinch of salt

Method:

In a bowl combine whole meal, baking powder, salt, sugar and mix well .

Add peanut butter, lemon essence, mix well into the dry ingredients.

At this stage your mixture will be crumbly and bit sticky texture depending how soft is your peanut butter. if your peanut butter is thick then warm it in the microwave for few seconds to soften.

Add your chocolate chips, then start adding water, make sure not to add water all at once and mix the mixture into a soft dough.

Roll dough into one inch balls and create any shape you want , place them on parchment paper and then bake it in preheated oven at 180 for 8 to 10 minutes.

After 10 minutes cookies might appear underdone, but don’t worry they are not, you can take them out and let them cool for about 15 minutes before removing from the tray, as they will start firming up while cooling.

After 15 to 20 minutes cookies will firm up and now they are ready to be stored  in airtight container.

  • You can swap peanut butter with almond butter if you are allergic to peanuts
  • Dip these into chocolate sauce once they are baked , this gives extra punch to the recipe
  • You can add toasted peanuts instead of chocolate chunks
