1-Heat a dry pan over medium heat. Add the chickpea flour to the pan and roast it until it becomes fragrant and turns a light golden brown. Remove the roasted chickpea flour from the pan and transfer it to a separate plate.
2-In the same pan, heat 3 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant, about 3-4 minutes. Add the chopped mushrooms to the skillet and cook until they release their moisture and start to brown, about 3-4 minutes.
Add the drained lentils to the skillet and stir well. Cook for another 2-3 minutes to allow the flavours to combine.
Handy Hint- When working with button mushrooms , be aware that they have tendency to release water while cooking . To ensure the perfect texture and avoid anu sogginess, make sure to cook the mushroom mixture until all the water has evaporated. This step will result in patties with a delightful crispness and enhanced flavour. So be patient and let the water evaporate completely for the best results.
3-Add the freedom spice blend and dish delicious spice blend to the mixture. Stir and cook for an additional 2-3 minutes to allow the spices to infuse into the mixture, add the roasted chickpea flour and chopped coriander. Mix well until all the ingredients are evenly combined. Remove the skillet from the heat, let it cool down completely.
4-Transfer the mixture to a blender or food processor and blend until it reaches your desired consistency. You can also use a potato masher if you prefer a chunkier texture.
5-Shape the mixture into patties of your desired size. This recipe should make approximately 8-10 patties, depending on the size.
Heat olive oil in a skillet over medium heat. Place the patties in the skillet and cook for about 3-4 minutes on each side, or until they are golden brown and crispy.
6- Once cooked, remove the patties from the skillet.

– In this recipe, I used Wattie’s lentils in spring water, which you can find in most grocery stores. However, you can use any type of brown lentils that you prefer.
 For the mushrooms, I used Oyster mushrooms. If you can’t find Oyster mushrooms, you can visit Hamilton Farmers Market every Sunday to buy some fresh mushrooms, or you can use regular button mushrooms as a substitute.
– PRO TIP – If you’re using button mushroom, try grating them with a grater instead of chopping them finely. This method gives you beautifully shredded mushrooms without the need for a blender. Its a quick and easy way to incorporate mushrooms into your patty mixture while adding a delightful texture. Give it a try and experience the diffrence.
– Gluten-Free Options: This recipe is naturally gluten-free since it uses lentils and mushrooms. If you choose to serve the patties in a burger bun, be sure to use a gluten-free bun or lettuce wrap if you need to avoid gluten.
