1-Heat a dry pan over medium heat. Add the chickpea flour to the pan and roast it until it becomes fragrant and turns a light golden brown. Remove the roasted chickpea flour from the pan and transfer it to a separate plate.
2-In the same pan, heat 3 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant, about 3-4 minutes. Add the chopped mushrooms to the skillet and cook until they release their moisture and start to brown, about 3-4 minutes.
Add the drained lentils to the skillet and stir well. Cook for another 2-3 minutes to allow the flavours to combine.
Handy Hint- When working with button mushrooms , be aware that they have tendency to release water while cooking . To ensure the perfect texture and avoid anu sogginess, make sure to cook the mushroom mixture until all the water has evaporated. This step will result in patties with a delightful crispness and enhanced flavour. So be patient and let the water evaporate completely for the best results.
3-Add the freedom spice blend and dish delicious spice blend to the mixture. Stir and cook for an additional 2-3 minutes to allow the spices to infuse into the mixture, add the roasted chickpea flour and chopped coriander. Mix well until all the ingredients are evenly combined. Remove the skillet from the heat, let it cool down completely.
4-Transfer the mixture to a blender or food processor and blend until it reaches your desired consistency. You can also use a potato masher if you prefer a chunkier texture.
5-Shape the mixture into patties of your desired size. This recipe should make approximately 8-10 patties, depending on the size.
Heat olive oil in a skillet over medium heat. Place the patties in the skillet and cook for about 3-4 minutes on each side, or until they are golden brown and crispy.
6- Once cooked, remove the patties from the skillet.
7-To assemble the subs, spread a layer of carrot dip or beetroot dip on the sub roll. Add the cooked patties on top.
8- Add a generous amount of watercress, rocket, or your preferred greens to the sub. Top with microgreens for an extra burst of freshness.
9- Serve the Mushroom Lentil Patty subs immediately and enjoy.
10-Another delicious way to enjoy these lentil mushroom patties is by serving them with a flavourful carrot dip and beetroot dip layered in a bowl. Simply spread the carrot dip and beetroot dip in layers in a serving bowl, then place the mushroom lentil patties on top. For an extra touch of indulgence, drizzle some truffle oil over the patties as you can see in the image. To complete the meal, serve the layered dips and patties with a side salad and crusty bread. The combination of the flavourful dips, savoury patties, fresh salad, and crusty bread creates a satisfying and well-rounded meal option.
