1/2 kg boneless chicken / Tofu/ Paneer

1 tablespoon garlic paste

1 teaspoon ginger paste

3 tablespoon lemon juice

1 teaspoon salt


3/4 cup Greek yogurt / Vegan yogurt

3 teaspoon Next level butter chicken blend

1/2 teaspoon turmeric powder

1 teaspoon sweet paprika


1 onion (finely chopped)

2 tablespoon olive oil ( neutral flavor )

1 teaspoon turmeric powder

1 red capsicum medium size

2 tablespoon ghee / butter

2 can tomatoes

1/4 cup cashew nuts (soaked)

1 1/2 tablespoon Next level butter chicken blend

3 tablespoon honey / castor sugar/ Jaggery

1/2 cup cream / coconut cream

salt according to your taste

tablespoon fresh coriander leaves

Butter Chicken Recipe

Time to skip the Indian takeout and cook up your very own version of the popular dish with Mons Next level Butter chicken blend! Its about time when you create this dish in your kitchen with an ease. This recipe is lightly spicy, full of flavors and best part is you don’t have to go through million steps and get your pantry stocked with all sorts of spices now this blend will make everything possible for you to create this world renowned dish. Over the years while taking cooking classes I have had so many requests for this dish and always been asked to create a spice blend which will make an authentic butter chicken, In all honesty I wasn’t fully prepared to create this spice blend but after few months of being in business I challenged myself and it did take me one whole year to get this spice blend to this perfection. I wanted to create something which not only provides an authentic taste but also adds a joyful experience for each one of you while making this Butter chicken. I had to be proud of myself as I know there are some great Indian chefs who I would surely want to try this spice blend and see what Mon has created as its not easy to create a spice blend which has a wonderful tandoori smoky flavor and tastes as authentic as this Next level butter chicken spice blend does. Marinade chicken with garlic, ginger, lemon juice, salt. Mix everything well with hands until the marinade is completely coated on chicken. leave it for an hour

If making this recipe with paneer/ tofu / soya chaap then you need to skip second marinade and  mix everything together in the first step as it would take less time to marinade these ingredients, if marinated for too long then possibility is paneer, tofu, soychaap might fall apart while grilling/ roasting

After 1 hour in the same marinade add greek yogurt, turmeric powder, sweet paprika, next level butter chicken blend, mix well until coated and rest it again for an hour.

Heat your grill plate or any pan, add oil and grill your marinated chicken pieces from both sides until almost done / Preheat oven to 200 degree, string your chicken pieces onto skewers and roast chicken in the grill plate for 10 -15 minutes or until its done / you can use your barbeque to cook this marinated chicken. Once the chicken is cooked brush some butter/ ghee on the chicken pieces and keep it aside until you prepare the Makhni (Butter sauce)

For sauce add butter/ghee/ oil in a pan on a low medium heat

Add chopped onion, sauté for two minutes, add can tomatoes, diced capsicum, turmeric powder, Next level butter chicken blend salt according to your liking, mix everything together and simmer cook for 5, 6 minutes. After 6 minutes add honey / sugar of your choice, soaked and drained cashew nuts.Cook further for 2-3 minutes and switch off the heat.

Use a hand blender or mixer to make a fine puree. Make sure lids are tight when blending in a blender or let the sauce get cool down before you blend it.

In the same pan add butter / ghee, then add sauce, add cooked chicken/ paneer/ tofu/soy chaap, mix well . Simmer and cook for 2-3 minutes then add fresh cream / coconut cream. Give a good mix .

Add fresh chopped coriander serve hot with naan or rice




Marinade tofu/ paneer/ soy chaap for only 1/2 hour

In this recipe I used can tomatoes ,soy chaap as my meat substitute which is available from any Indian store (soy chaap) looks like meat and has meaty texture but is not gluten – free . You can choose to keep soy chaap as it is comes with stick or remove the stick and chop them into small pieces like sausages

If you are allergic to capsicum and cashew nuts then skip adding these two ingredients

If you want restaurant style butter chicken then make sure you add red capsicum and cashew nuts and of course lots of butter / ghee and cream

Cashew nuts have to be soaked Luke warm water for 30 minutes before you add these while cooking sauce

If you like spicy butter chicken sauce just add chili powder to the sauce while cooking tomatoes  but don’t add extra blend thinking that it will provide heat, it wont,  it might kill the flavorful balance of the recipe.

In this video I didn’t add cashew nuts as my hubby is allergic, with or without this sauce is going to taste amazing anyways.

You can buy paneer from Indian store / Pak and sav/ New World (Gopala brand)

Cooked this for the family tonight. A huge hit with everyone including the grandkids.
Daughter took the remainder of the jar home so will have to stock up again.
Left over sauce for breakfast with an egg or some veggies??

If I’m doubling sauce recipe do I double the spice mix too? Or will it be too strong?

Hi Marcy,
No I wouldn’t double it, I will give you my example when I make it for a 6 people, I add one onion large size, 1 whole red capsicum, 2 can tomatoes, 3 teaspoon butter chicken spice blend(but not levelled) You get enough flavours coming through these measurements if making sauce but if you are marinating chicken separately and using half kg boneless chicken, I would add 2 teaspoon extra butter chicken spice blend, garlic, ginger, yogurt, 1teaspoon turmeric, red chilli powder if you like it spicy, add bit of lemon juice and mix well. let it marinate for overnight or minimum three to 4 hours.
