Marinated & Roasted Potatoes Served with Next level Butter Chicken Sauce

Ingredients:

FOR  MARINADE

1 kg small size potatoes (peeled )

1 tablespoon garlic paste

1 teaspoon ginger paste

2 tablespoon lemon juice

1 teaspoon turmeric powder

1 teaspoon sweet paprika powder

1 tablespoon Next level butter chicken spice blend

3/4 cup Greek yogurt / vegan yogurt

1 teaspoon salt

FOR SAUCE

1 onion (finely chopped)

2 tablespoon olive oil ( neutral flavor )

1 teaspoon turmeric powder

1 green capsicum medium size

2 tablespoon ghee / butter

2 can tomatoes

1/4 cup cashew nuts (soaked)

1 1/2 tablespoon Next level butter chicken blend

3 tablespoon honey / castor sugar/ Jaggery

1/2 cup cream / coconut cream

salt according to your taste

tablespoon fresh coriander leaves

Potatoes in butter chicken sauce

If you love roasted potatoes and creamy butter chicken sauce then this recipe in your house will be total winner and will be a perfect combo for those who want to enjoy the Flavours of butter chicken sauce but cant eat meat or for those who are looking vegetarian. Method:

Marinade whole peeled potatoes  with garlic, ginger, lemon juice, turmeric power, sweet paprika, next level butter chicken blend and salt. Mix everything well with hands until the marinade is completely coated on potatoes. leave it covered for minimum 6-7 hours or overnight for best results

If making this recipe with paneer/ tofu / soya chaap then you no need to marinate it for 6-7 hours 1-2 hours should be enough, if marinated for too long then possibility is paneer, tofu, they might fall apart after being too soggy.

On a grill plate add oil and roast or grill your marinated potatoes pieces from both sides until almost done / Preheat oven to 200 degree, string your potatoes pieces onto skewers or keep it simple and roast potatoes  on the grill plate for 20 -25 minutes or until its done / you can use your barbeque to cook this marinated potatoes. Once the potatoes are done brush some butter/ ghee on the potatoes pieces and keep it aside until you prepare the Makhni (Butter sauce)

For sauce add butter/ghee/ oil in a pan on a low medium heat

Add chopped onion, sauté for two minutes, add can tomatoes, diced capsicum, turmeric powder, Next level butter chicken blend, salt according to your liking, mix everything together and simmer cook for 5, 6 minutes. After 6 minutes add honey / sugar of your choice, soaked and drained cashew nuts. Cook further for 2-3 minutes and switch off the heat. Recipe for sauce is on the website Next Level Butter chicken

Use a hand blender or mixer to make a fine puree. Make sure lids are tight when blending in a blender as the sauce will be hot or let the sauce get cool down before you blend it.

In the same pan add butter / ghee, then add sauce, add cooked roasted/ paneer/ tofu/soy chaap, mix well . Simmer and cook for 2-3 minutes then add fresh cream / coconut cream. Give a good mix .

Add fresh chopped coriander serve hot with naan or rice or choose to dip your roasted potatoes and enjoy

 

Notes:

Marinade tofu/ paneer/ soy chaap for only 1/2 hour or max an hour.

If you are allergic to capsicum and cashew nuts then skip adding these two ingredients

If you want restaurant style butter chicken then make sure you add capsicum and cashew nuts and of course lots of butter / ghee and cream

Cashew nuts have to be soaked in Luke warm water for 30 minutes before you add these while cooking sauce

If you like spicy butter chicken sauce just add chili powder to the sauce while cooking tomatoes  but don’t add extra blend thinking that it will provide heat, it wont,  it might kill the flavorful balance of the recipe.

You can choose to make these potatoes separately and serve it with your favorite sauce.

In this video I didn’t add cashew nuts as my hubby is allergic, with or without this sauce is going to taste amazing anyways.

You can buy paneer from Indian store / Pak and sav/ New World (Gopala brand)
