Layered Samosas

Ingredients:

 For Dough

Whole meal Flour – 2 cups or Plain Flour

Pinch salt

Carrom seeds – 1tsp

Olive oil – 2tbsp

Plant based milk – 1/3 cup or as required.

FOR STUFFING

Potatoes – 3 boiled and mashed

Cumin seeds- 1tsp

Oil – 2tbsp

Red chilli powder (Kashmiri)

Turmeric powder- 1/2 tsp

Tomato puree- 1/2 cup

Coriander powder- 1tsp

Garam masala- 1/2 tsp

Sweet chilli sauce – 1tbsp

Salt according to your taste

MIXTURE FOR LAYERING

  • Cornflour – 4tbsp
  • Olive oil – 4tbsp or enough to make a runny paste

Let us make layered samosas or call them spiral curry puffs. These are so much fun to make and visually so beautiful too. In India, its a traditional sweet recipe made with coconut based stuffing, but I wanted savoury so made this easy tasty recipe for you all. Enjoy these tasty snacks.

Method:

 FOR DOUGH

 In a large bowl add all the dough ingredients and mix well to make a moist dough.

Once the dough is done grease tiny bit of oil over the dough. Cover and let it rest for 10 minutes

FOR FILLING

In a pan add oil, on a low medium heat, add cumin seeds, let it splutter.

A Turmeric powder, salt, red chilli powder, and Tomato puree sweet chili sauce, mix well, cook for 2 to 3 minutes.

Then add Mashed potatoes. Give a good mix and cook until 2 to 3 minutes

leave it to cool completely before you start filling it.

PASTRY SHEET PREPARATION

Take the dough and with a help of knife divide the dough into 5 to 6 portions. Make flat bread by sprinkling flour time to time to avoid dough sticking to the surface.

Once the entire dough is flattened into flatbread, start layering these on top of each other but every time you layer these make sure to add the paste in between them and sprinkle flour each time.

Once all the layers are done roll it into a log shape. Cut the edges and make 6 – 7 small portions again.

Flatten it with the help of your palm, roll one by one with the help of rolling pin and fill the each one of them with Tbsp of filling and seal the edges around the corners.

Fry them in deep oil until they get golden brown and crisp, or you can bake them on 180° for at least 15 – 20 minutes. When you bake make sure you apply oil on top of each layered samosa so that you can see those layers.

Enjoy this with any Sauce
