Indian Style Dish Delicious Cauliflower

Ingredients:

1 large head cauliflower, cored and broken into small size florets

3 tablespoon olive oil

1 1/ 2teaspoon mustard seeds (black mustard seeds)

curry leaves 7,8 leaves

11/2 teaspoon turmeric powder

2 1/2 teaspoon dish delicious spice blend

2 teaspoon lemon juice

salt & pepper according to your taste

Method:

Heat oil in a large cast iron pan over medium – high heat, add mustard seed, curry leaves. Cook, tossing for few seconds until mustard seeds start to pop and splutter, Once you see mustard seeds and curry leaves spluttering, add turmeric powder, 1/ 2 teaspoon salt. Mix it quickly with oil and make sure oil isn’t too hot. If the oil gets too hot you have a high chance of burning mustard seeds, curry leaves and turmeric powder, which might not give a great taste so be careful if you are making this in cast iron pan. If you are not too confident with cooking in cast Iron pan, use non stick pan, but making sure heat levels are not too high.

Add cauliflower florets to the pan and toss to coat in the turmeric and oil well . Sprinkle some water with hand over cauliflower, cover and cook for 1 minute.

After 1 minute, add dish delicious spice blend, 2 teaspoon lemon juice, toss to coat in the spice blend. Cover and reduce the heat to medium, cook for further 5 minutes, tossing about every 2 minutes. Once cauliflower goes tender take the lid off and cook further 1 minute on high flame until cauliflower gives charred look.

Adjust salt, lemon and pepper according to your taste

Add chopped coriander leaves and serve hot.

Notes:

You can buy mustard seeds from any Indian store

You can buy curry leaves from any Indian store it will cost you 3.99$ max . After one use you can wrap the bunch in newspaper and it will stay fresh for a month.

Use it to make roasted potatoes, pumpkin soup, any curries you like, it just adds a unique flavour profile to what ever you cook.

You can choose to serve this dish as a side dish or choose to serve it as a main meal, served on any hummus, carrot dip or beetroot dip from my website.

If you don’t have mustard seeds, add cumin seeds instead but adding mustard seeds gives this recipe a great flavour.

If you don’t have curry leaves, you can make this recipe without curry leaves too but do give it try with these fragrant leaves, you will love this recipe for life.
