Healthy Pearl Barley, Kale, Purple Spinach Nourished Bowl

Ingredients:

1 cup barley (washed, soaked & cooked)

5 large kale leaves

1 Purple Spinach (washed & finely chopped)

1/2 red capsicum (deseeded & Finely sliced)

1/2 Yellow capsicum (deseeded &finely sliced)

1 Zucchini ( sliced or diced )

1 teaspoon garlic paste or chopped garlic

1 teaspoon ginger paste or grated fresh ginger

2 teaspoon lemon juice

salt & pepper to taste

2 teaspoon freedom spice blend

nuts of your choice ( almonds, walnuts, hemp seeds. pumpkinseeds, sunflower seeds )

2 tablespoon olive oil

This warm hearty healthy Pearl barley salad is a great addition to your vegetarian meal for coming winter season as it can be made ahead of time and is great for your lunch / dinner or any of your gatherings to impress your friends and family . This recipe is made with using ancient grain, fresh kale, purple spinach and using my favorite blend freedom spice blend which makes it a complete nourished meal in all ways. I love adding greens to my salads and always looking forward to creating recipes which are loaded with greens, simple to create, and that works as a complete filling and hearty meal and this recipe defiantly ticks all the boxes. Method:

In a large pan bring the 5 cups of  water to boil, add salt then add barley, simmer the heat and cook for at least 15-20minutes stirring it continuously

To check spoon out  a few grains with the help of spoon and press between your fingers to check if its done, if its tender and chewy the switch off the heat and strain through sieve, rinse under cold water, keep aside

In a nonstick pan add olive oil, garlic ginger paste, sauté for few seconds then add zucchini, peppers sauté for 1minute adding freedom spice blend, salt and pepper to taste.

Add kale, half chopped spinach mix well , Add barley pearls toss everything together and cook further for 1 minute.

Add lemon juice give it a mix again

Switch off the heat , add nuts of your choice and fold in remaining purple spinach to give a crunchy texture

Serve it with extra drizzle of avocado oil, sprinkle some hemp seeds and enjoy

Notes:

  • If you are allergic to capsicums, replace it with red onions, carrots, beans, corns, broccoli
  • If you cant find purple spinach add baby spinach instead
  • I buy my produce from farmers markets and bought these from Cambridge Farmers market
  • I love to drizzle chili infused avocado oil while serving
  • Purple spinach is also known as Chinese spinach and is very similar to standard spinach when it comes to taste
  • Its rich source of protein containing a complete set of amino acids . This is high concentrated with iron, copper, calcium, folate, vitamin A, B, and C
