Grilled Oyster Mushroom Skewers with Next Level Butter Chicken Sauce

Ingredients:

FOR THE SKEWERS:
12 big oyster mushroom clusters ( approximately 500 grams)
2 tablespoons Next Level Butter Chicken spice blend
Pinch of salt
Olive oil (or regular oil)
Skewers (wooden or metal)
FOR THE BUTTER CHICKEN SAUCE :
3 tablespoon olive oil
1 onion, roughly chopped
2 cans tomatoes (about 800 grams)
Salt, to taste
1 teaspoon turmeric powder
2 tablespoons lemon juice
2 tablespoons maple syrup
1 1/2 tablespoon Next Level Butter Chicken spice blend
FOR SERVING:
Cooked rice
Wedge of fresh lime
Grilled Oyster Mushroom Skewers with Next Level Butter Chicken Sauce
New recipe food lovers,  If you’re looking to shake things up in the kitchen, you’ve come to the right place. This recipe features my Next Level Butter Chicken spice blend and some fresh oyster mushrooms I bought from my favorite  Hamilton Farmers Market.
If you’ve never tried oyster mushrooms or you’re a bit unsure about them, trust me,this dish is a total game changer. The smoky, grilled mushrooms paired with a rich Butter Chicken sauce create a flavor explosion that you won’t want to miss.

Method:

Prepare the Mushrooms – Clean the oyster mushrooms gently with a damp cloth. Tear them into smaller pieces if desired for skewering.

Marinate the Mushrooms – In a mixing bowl, combine the oyster mushrooms with the Butter Chicken spice blend, a pinch of salt, and drizzle generous amount of olive oil. Toss until the mushrooms are well coated.
Skewering – Thread the marinated mushrooms onto the skewers. If using wooden skewers, soak them in water for about 30 minutes prior to grilling to prevent burning.
Grill the Skewers – Preheat your grill or grill pan over medium heat. Place the skewers on the grill and cook for about 5-7 minutes on each side, until the mushrooms are tender and slightly charred. Brush some oil on oyster mushrooms when grilling.
Prepare the Butter Chicken Sauce – In a saucepan, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent. Add the can tomatoes, salt to taste, turmeric powder, lemon juice, maple syrup, and the Butter Chicken spice blend. Stir well to combine.
Bring the mixture to a simmer and cook for about 10-15 minutes, allowing the flavors to meld.  Once the sauce is done, use the immersion blender to make smoother sauce.
Serve – In a bowl, lay down a generous amount of the Butter Chicken sauce. Add cooked rice on top of the sauce, then arrange the grilled oyster mushrooms on top. Garnish with a wedge of fresh lime on the side.

  These skewers can be served in pita bread for a delicious wrap.
  They make a great addition to fried rice for a hearty meal.
  Pair them with any hummus of your choice for a flavorful dip.
 This dish is perfect for a dinner meal, offering a satisfying and wholesome option.
  You can also enjoy the skewers without any sauce, making them a great choice for a platter or appetizer.
 If desired, add lemon juice to the marinade for extra tang.
 For those who enjoy sweetness, include a bit of maple syrup in the marinade.
  To spice things up, consider adding a touch of smoked paprika.
