Golden Milk Almond Cookies

Ingredients:

2 cups Almond flour

1 teaspoon baking powder

1 tablespoon turmeric latte blend

pinch of salt

2 tablespoon maple syrup

1/4 cup almond milk or any plant based milk or Luke warm water

These Turmeric latte cookies are easy to make lightly sweetened and defiantly satisfy your sweet tooth cravings at all times. Method:

  • Preheat oven 240 degree C
  • In a  stand mixer add almond meal, baking powder, pinch of salt, turmeric latte blend , mix well until blend is all mixed through and becomes yellow in color. I love using my hands while doing this. You can mix everything in a large bowl if you don’t have a stand mixer
  • Then add maple syrup into dry mixture and put the mixer on the slow speed and start mixing, add milk slowly while mixture is blending
  • Blend until it starts forming a dough, at this stage if you feel dough is bit sticky don’t stress as it will come alright once milk gets soaked by almond milk
  • Line a baking sheet with a parchment paper
  • Shape dough into little balls and  flatten it with a help of rolling pin make a shape as per your choice with a cookie cutter  .
  • I made 3 versions as you can see in the images, so you can use any cookie cutter of your choice or just roll into a flat ball , use your hands or back of the glass or cup to flatten the cookie dough into disk shape
  • Bake these for 8, 10 minutes on 180 C until edges are slightly golden brown and top appears to be slightly golden brown and dry as well.
  • Don’t over cook them if you find its still soft , they will get hard once you cool them down .
  • Remove from the oven and allow cookies to cool down on the cooling rack for at least 15 – 20 minutes before serving
  • Store these in any airtight container and enjoy these sunshine cookies

Notes:

  • You can buy mooncake cookie mold from amazon
  • If you make cookie with which is flat make sure you check the timing as it may vary 7-8 minutes maximum
  • If the cookie is think then it might take longer to cook and will be chewy instead of crunchy as flat cookies will be bit crunchier
  • You can add chocolate chips in these cookies for extra flavors
