I thought, why not swap the usual chili oil for something way more exciting — my homemade Golden Honey Vinaigrette. And let me tell you, this little switch totally changed the game. Prepare the eggs:
Bring a small pot of water to a boil. Gently add the eggs and cook for 6-7 minutes for soft-boiled eggs. Transfer to ice water, peel, and set aside.
Make the herb & sesame mix:
In a small bowl, combine the chopped fennel leaves, coriander, sesame seeds, and Golden honey vinaigrette, Mix well.
Toast the bread:
Lightly toast the sourdough slices until golden and crisp.
Spread the dips:
Spread your beetroot dip on one slice and your carrot dip on the other.
Assemble the eggs:
Slice the soft-boiled eggs in halves or few small bite size as you see in the picture and place them on top of the dips.
Generously drizzle prepared herby Golden Honey Vinaigrette over the eggs and toppings.
Finish with microgreens for a fresh, vibrant touch and enjoy.
