Freedom Spice Blend All Purpose Sauce

  • 2 Red onions roughly chopped
  • 2 Chopped tomato cans
  • 2 tablespoon olive oil
  • 1 1/2 teaspoon cumin seeds
  • 11/2 tablespoon Freedom spice blend
  • 1teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 turmeric powder
  • 1 teaspoon Kashmiri red chili
  • 1 tablespoon ghee / butter
  • Salt according to your taste
  • 1 tablespoon coconut sugar / jaggery

Making Indian sauces are not a rocket science, lets be honest its a super easy job as long you know how to and what to add into it. Using freedom spice blend will cut down your time in kitchen and at the same time it will give one of the best base for your delicious curry without adding too much of your effort. I promise this recipe is better than going to the restaurant, best part you can store it for later use, which can helpful for your lazy days. Using this blend brings the right amount of flavors to everything you make at home. I will keep sharing some of my favorite recipes around this blend !


In a non-stick pan, heat oil on a low medium flame, add cumin seeds sauté until it starts spluttering

Make sure heat is not on high flame as there might be a chance of cumin getting burnt in that case

Add roughly chopped onion and sauté on a low medium heat for about 1-2 minutes until onions gets translucent and pink in color, once oil starts separating add garlic and ginger paste give a good mix and sauté for 1 more minute

Add chopped tomato cans, add turmeric powder, red chili powder, salt, freedom spice blend, give a good mix and cook for 2,3 minutes

At this stage cover it with a lid as tomatoes might splash everywhere

After 3 minutes add ghee or butter ,sugar cook for further until everything is cooked and the oil separates completely

Once done let it cool down for about 10- 15 minutes then blend it in a blender to achieve a smooth sauce

Cool completely and refrigerate in an air tight container for at least 7 days or freeze it for a month


This sauce is ideal for all kinds of vegetarian and meat dishes

This recipe makes at least 8 cups of sauce and you can use it for various recipes by diluting this sauce with water or cream or use as it is

You can use this freedom spice blend masala sauce for chickpeas, chicken curry, cauliflower curry, fish or prawn curry or lamb

I usually freeze this sauce in different small containers and use it when making meals

I usually use non stick pans to make my sauces

You can sue fresh chopped tomatoes but cooking time may vary in that case

Adding sugar is optional but when you make tomato based recipes sugar is added to cut down the acidity levels coming from tomatoes, I prefer using jaggery powder which you can easily buy from Indian stores
