Feijoa Cake

Feijoas- 1 Cup mashed (7,8 medium size)

Spelt flour- 2 cups

Olive oil – 1/3 cup or (2tbsp extra if you are using Wholemeal flour

Cinnamon powder- 1tsp

Ginger grated- 1tsp

Baking soda- 1tsp

Baking powder- 2tsp

Jaggery powder- 1cup

Almond milk – 1 1/3 cup

Feijoas matures in autumn and is green egg shape fruit. It has sweet, aromatic flavour and the flesh is very juicy. It tastes like Guava. It is also called pineapple guava by Google Uncle’s info. I have lots of homegrown feijoas at the moment so making most of it. I love this fruit and in New Zealand it is the fruit that is commonly available in everyone’s garden. I love to explore the fruity flavour and texture in my baking, and I am happy with the result. It tastes yummy, texture is soft and moist yet firm.

NOTE – Once cake is baked make sure you let it be on cooling rack for at least an hour to settle down completely.
