I love making this dip not because of its stunning color but this vibrant dip is completely addictive and the best part is when I take this as a sample with me to farmers market and shows the response I get from people who taste this dip is what I love the most. I often get asked why don’t I sell these but I tell people I am sharing the most valuable Mother Natures gift with you all (Dish Delicious blend) where the actual magic lies. This Roasted carrot dip is super delicious, healthy, gluten – free, vegan goes well as snack or use it as a spread for your wraps, sandwiches or create a main meal. Method:

Pre heat oven to 240 degree

Wash carrots, roughly chop into small pieces, spread carrots and garlic cloves evenly on a lined roasting pan drizzle olive, season it with salt, pepper as per your taste and 3 teaspoon Dish Delicious blend.

Rub blend well with carrots, you can drizzle some more olive oil if it looks dry, I prefer adding more oil, it keeps carrots moist and then I add that into blender while blending or use left over oil to drizzle over carrot dip while serving for that extra lush flavor

Roast carrots for 20 to 25 minutes at 200 degree, flipping carrots halfway through, until completely tender

Once carrots are done, let it cool slightly, then add them to the food processor with cup of olive oil and blend it first

Then add almonds, lemon juice, honey and continue blending until you reach the desired consistency, adjust salt, pepper and lemon according to your taste if needed

Transfer it in a serving bowl, drizzle some olive oil or avocado oil , sprinkle some hemp seeds and enjoy

Notes:

If you are using New Zealand garlic make sure just use 2 cloves as its very strong in flavor

This recipe can be made without garlic too, it wont effect the taste of this dish.

If you are using baby carrots then no need to peel skin to make this dip, if you are using mature carrots then you might need to peel skin a bit

Important tip – I often add olive oil 1 cup when I roast carrots, in this process you get moist flavorful carrots and at the same time in the end you can collect a delicious flavorful olive oil. You can add some while blending and store some in airtight container for your other recipes

If you want this dip to be crunchy then add whole almonds and blend for 1 or 2 minutes but if you need creamy texture then opt for crushed almonds or add tiny bit of iced cold water and blend it for a longer time until it becomes creamy

Honey and lemon juice can be adjusted according to your taste buds but I love adding at least 1 1/2 table spoon of honey and lots of lemon juice

If you want this dip to super creamy, add iced cold water along with 2 or 3 cubes of ice, this helps the texture become smooth and creamy.

This dip can be made 2 days ahead of any party, cover and chill in airtight container

Bring it room temperature before serving and it can last in fridge for at least 3,4 days

This dip can be used as a pasta sauce if you make it creamy or use it as a filling in shelled pasta to make a meal, You can make same dip with pumpkin, kumara, squash

Got this blend at the Opotiki event on Waitangi Day. The best carrots I’ve ever tasted!

Just made my first batch and it’s definitely not quite as good as yours. I’ll cut down on the lemon juice next time as it overshadowed the other flavours. Still a dish I’ll be proud to show off though!
