Creamy Almond Vegetarian Chicken

Ingredients:

FOR MARINATION

1 Can soy chicken (6pieces )(store bought)

3tablespoon yogurt

2teaspoon lemon juice

1/2 teaspoon salt

1/2teaspoon black pepper

1 teaspoon ginger paste

1 teaspoon garlic paste

FOR PASTE

1/3 cup almonds without skin or Cashew nuts

1/3 cup Shredded coconut

1/3 cup water

FOR GRAVY

2 tablespoon olive oil

1/2 Cup red onion (finely chopped)

1 tablespoon fenugreek leaves (dry)

1 tablespoon Freedom spice blend

1/2 cup coconut cream

Salt & pepper to taste

This is a popular Indian vegetarian chicken alternative for people who don’t eat meat. This recipe is rich in protein and is tasty creamy dish, mildly spiced flavored from black pepper and freedom spice blend. This dish is popularly served during weddings and parties, its a delicious vegetarian recipe that looks like meat and taste just Devine ! I love making this very often as its very comforting meal takes less time to prepare and once you make this I am pretty sure you will never spend money on any takeaways.

Method:

Remove Soy chicken from the sticks and cut them in small pieces or as per your liking

In a medium size bowl add soy chicken, yogurt, salt, garlic, ginger paste, lemon juice, black pepper, rub entire mixture all through the soy chicken, cover the bowl and refrigerate it for minimum 5,6 hours

In a bowl add water 1/3 cup water soak almonds, shredded coconut and leave it for about 15 to 20 minutes

After 15-20 minutes add the mixture into a blender and make a paste, if paste gets bit thicker add more water to blend further

In a non stick pan add olive oil, 1tablespoon ghee , then add chopped onions, sauté until translucent, when onions are slightly golden in color add almond paste mix well and cook for few seconds then add soy chicken mix well and cook for about 10minutes making sure you mixing it continuously to avoid paste getting stuck to bottom of your pan and getting burnt

Now add coconut cream, mix well

Add fenugreek leaves , black pepper, salt, freedom spice blend and give a good mix cook for further 5minutes

If  you want gravy to be runny add Luke warm water

Add chopped almonds, garnish with coriander leaves

Serve it with basmati rice, naan bread or garlic bread and enjoy!

Notes:

  • Soy chicken tins you can easily buy from any Indian store ( Soy chaap its called)
  • Its not a gluten-free product unless you make soy chicken at home which might be a tedious job but some products are gluten-free check ingredient list before you buy
  • If you want to make this a vegan recipe marinade in coconut yogurt instead of yogurt
  • You can this recipe for chicken dish too
  • To get charred look, on a grill spread some oil on medium heat add soy chicken and grill from all sides until pieces become golden brown
  • Make sure add salt almost in the end to prevent cream from curdling
