Chai Latte Stuffed Dates

Ingredients:

10 – Soft Medjool dates

4 tablespoon – peanut butter (or any nut butter)

1 1/2 tablespoon – Chai latte blend

1/3 cup dark chocolate( choose according to your taste)

If you are one of those who love indulging on to sweet treats on daily basis like me and looking for something exceptional to try then this recipe is a win win already. Chai latte blend mixed with peanut butter is a great way to indulge yourself into something healthy and at the same time bringing out an unique and outstanding flavors as well. I love creating such recipes around my blends as my focus is to share and absolute easy way to incorporate spices into our daily life. This recipe is naturally gluten-free, dairy-free, sugar-free and a great snack for everyone with or without allergens. I am sure you will enjoy making this for your family and friends. Method:

Pit the dates and split them in half with a help of sharp edged knife, be careful not to cut the edges all the way till the end as you wont be able to close when its filled.

In a bowl add peanut butter, chai latte blend and mix it well until it gets incorporates well . You can taste and adjust the flavors according to your liking.

Once done start filling the cavities of the dates with the chai latte peanut butter mixture. scoop in as much as you can and close the dates tightly

Put the stuffed dates back in the fridge until mixture sets, keep it for 20 to 25minutes . This step is only required if you are dipping this in chocolate sauce, if you want to enjoy these without chocolate then no need to keep in the fridge . keep them in airtight container and enjoy.

While they are in fridge, melt your chocolate of your choice in a double broiler over medium heat, once chocolate becomes runny and smooth in texture, bring out dates from the fridge, dip the dates one by one in the melted chocolate, coating them from all sides and let them set on the cooling rack for few minutes before you enjoy these.

Sprinkle chopped nuts of your choice to give that fancy look and at the same time it adds additional value to these healthy snacks

Put them back in the fridge to harden them for 20-25 minutes

Put them in airtight container leaving them in fridge and enjoy !

Notes:

For this recipe you can choose to add any nut butter of your choice if you are allergic to peanuts

In this recipe I used smooth homemade peanut butter with no salt, no sugar and no oil , no flavor

Flavors came from chai latte blend and if you want to choose peanut butter for your this recipe use plain good quality one, always read labels before you buy nut butters, you will be surprised and educate yourself the more you read the labels

This is one tip where you all would like to focus on, when bringing out dipped dates and keeping them on flat surface to dry and get harden, if you have done this before you might have noticed it breaks while picking up, chocolate gets hard, I always apply a generous amount of olive oil on cooling rack and then put my dates on top. It helps chocolate not to stick and its easy to get the dates off from the rack  and also the leaves a nice print at the back of the dates, otherwise half of the chocolate sticks to the parchment paper and it doesn’t look store bought.

I use butter knife to get these dates off from the rack .

I use long wooden barbeque sticks to dip my dates into chocolate sauce . Its a great option when you don’t want your hands and kitchen to look like a mess .
