Chai Latte Almond Cookies

Ingredients:

1 1/3 Cup almond meal

1/3 Cup Coconut sugar

1 teaspoon baking powder

1 tablespoon chai latte blend

Pinch of salt

1/4 cup Luke warm water

 

Almond Cookies

Deliciously satisfying chai latte cookies which are chewy and super easy to make. I am really excited to share these cookies with you all as I love creating recipes which are not only flavorful but at the same time is enriched with healthy benefits too. These cookies are gluten-free, no-dairy ! Method:

Preheat oven 240 degree F

In a medium size bowl. combine almond meal, baking powder, chai latte blend, pinch salt, coconut sugar mix well with a help of spatula

Then add water, into dry mixture and mix well until it starts forming a dough, at this stage dough might be sticky don’t stress as it will come alright once water gets soaked by almond meal

Line a baking sheet with a parchment paper

Shape dough into little balls, about 1 inch diameter, it will make at least 8, but can vary as it depends on the size  you prefer

Use your hands or back of the glass or cup to flatten the cookie dough into disk shape

I used mooncake cookie mold to shape these cookies, you can buy these from amazon or wish websites

Once done bake these for 8 – 10 mins on 180 C, until the edges are slightly golden brown and top appears to be brown and dry as well

Remove from the oven and allow cookies to cool for on cooling rack for at least  10, 15 minutes before serving

Store these in any airtight container and enjoy these cookies !

Notes:

  • You can add cacao powder if you want some change in your next batch (2tsp should be fine)
  • You can sprinkle some caster sugar and nuts before baking it adds bit fancy touch to these cookies
  • You can use jaggery powder instead coconut sugar
