Ingredients:

3 cups raspberries (fresh or frozen)

1 cup blackberries (fresh or frozen)

3 tablespoon chiaseeds

1/3 cup chai honey

2 teaspoon chai latte spice blend

2 tablespoon olive oil

1 tablespoon lemon juice

1/8 teaspoon salt

3 tablespoon water

Method:

In a medium pan, on a low medium heat, add raspberries, blackberries, lemon juice, olive oil, chai latte blend, water.

Stir well to combine. Cook over low medium heat until berries begin to release juice . Press berries with a masher to release more juices then add chai seeds and mix well.

Cook until 10minutes, choose the thickness according to your liking. Switch off the heat and add Chai honey, taste and adjust the sweetness according to your taste buds and mix well to combine.

Serve warm or choose to keep it in air tight container once it cools down and enjoy !

Notes:

If you think chai honey quantity is too much for you can do half and half , jaggery, coconut sugar , plain sugar, or choose to add stevia

for example – 1/ 3 cup chai honey/ 2 tablespoon jaggery

It will be only in raspberry compote recipe as raspberries tend to be bit sour, to balance that sour flavour any form of sugar comes as help, but if you make mixed berry compote then adding chai honey will be enough.

You can skip to add lemon juice this ingredient is not necessary but it just adds a little bit of edge to this recipe and if you want to preserve this for a longer time then lemon works as a preservative as well.  So choose accordingly

I personally don’t add honey while cooking, as adding honey to high temperature disturbs the nutrition level of raw honey.  Best to add honey is when the compote is ready and still warm. switch off the heat and add honey. In this way the nutrition value in honey stays intact

You can add vanilla exact instead chai latte if you want but adding chai latte again brings a unique flavours to this recipe.

I tried to freeze it in a ice cube tray and it worked. Freeze it in ice cube tray and use it when needed.
