6 medium to large potatoes

4 tablespoon olive oil

1 tablespoon dish delicious spice blend

2 teaspoon garam masala spice blend

salt and pepper according to taste


scooped potato flesh

2 teaspoon black garlic puree / 2 teaspoon crushed garlic mince

1 teaspoon dish delicious spice blend

1 tablespoon ghee

spiced chickpeas

Basil coriander dressing / Coriander mint chutney ( recipe is on the website )

yogurt dressing

Avocado infused oil

2 table spoon dukkha spice blend

1 tablespoon capers

handful micro greens

Beetroot dip to serve on ( recipe is on website )


Chickpea baked potato recipe

I love creating flavors so used black garlic puree which adds a fantastic touch to this recipe but even if you don’t get a chance of buying one, adding dish delicious and garam masala spice blend will take you to the journey of flavors. When I create a recipe I focus on providing a wholesome meal and share what spices can instantly do to bring an impact to an ordinary dish. Preheat oven to 240 degrees

Wash potatoes, scrub off all the dirt, pat dry, using a fork prick the potatoes making tiny holes all over potatoes. This ensures when spices are rubbed with olive oil, it will seep into potatoes as they get roasted

One by one place potatoes in a roasting casserole dish or roasting tray, drizzle generous amount of olive oil over the potatoes, sprinkle dish delicious spice blend, garam masala spice blend , coat all the potatoes . Bake for 30 -40 minutes at 200 degrees . Bake until potatoes are soft and tender inside. You can pierce and check with the help of fork to ensure if they are done. The fork should easily pierce through the center if potatoes are done

Once done remove from the oven and allow to cool but not completely, with the help of a knife cut open each potatoes lengthwise, going from center towards the end but making sure not cutting it till the end, start scooping out potato flesh from inside and  keep it in a bowl.

I used 5 potatoes for this recipe and used 6th one for the filling

In a pan add 1 table spoon ghee, add 2 teaspoon black garlic, 1teaspoon dish delicious spice blend mix well then add all the potato flesh you scooped out and one which you mashed, season it with salt and pepper according to your taste. cook for 1 minute until you get all the flavors in  mashed potatoes.

If you cant find black garlic puree don’t stress, add crushed garlic in ghee and repeat the process as mentioned above.

Fill mashed potatoes in the cavities, add chickpeas, basil pesto, drizzle yogurt dressing , sprinkle dukkah, drizzle some avocado oil and serve it as you see in the image . I served it with beetroot dip





You can be as creative as you want when it comes to adding stuffing in these jacket potatoes

You can fill beetroot dip in the potato cavities and add chickpeas and rest of the dressing as mentioned

You can add carrot dip and add all the topping as mentioned

You can add corns, peas,  red kidney beans  ( In a pan add 1 table spoon olive oil, then add 1 cup corns, 1/2 cup peas, red kidney beans, add some dish delicious spice blend , give a good mix . If you like butter can add butter but I prefer Ghee (clarified butter)instead which you can find from any Indian store.

This can be used as a filling for this jacket potatoes .

You can use frozen peas, corns and can beans for this recipe

For this recipe I used  (Neudorf Black garlic puree )

For yogurt dressing I used unsweetened yogurt, added handful dill, chopped capers, salt and pepper , mix well and use it as a dressing. pairs really well with warm potatoes. If vegan use coconut yogurt instead
