Baked Caramelized Cabbage In Tomato Gravy

Ingredients:

FOR TOMATO SAUCE

2 Red onions roughly chopped

2 Chopped tomato cans

2 tablespoon olive oil

1 1/2 teaspoon cumin seeds

11/2 tablespoon Freedom spice blend

1 teaspoon garlic paste

1 teaspoon ginger paste

1 turmeric powder

1 teaspoon Kashmiri red chili

1 tablespoon ghee / butter

Salt according to your taste

1 tablespoon coconut sugar / jaggery

1 cabbage medium head

This Baked Caramelized cabbage dish is very comforting recipe for all seasons. Its a recipe full of flavors which comes from lightly charred cabbage, rich and robust flavors added by freedom spice blend. This recipe requires minimum effort in kitchen and you will be surprised that how it brings lots of wow factor when you serve this dish to dinner table. This cabbage dish melts into your mouth and I am sure this will be your family favorite in no time. Easy, Low- carb, healthy and packed with amazing flavors. Method:

  • In cast iron pan heat oil on a low medium flame, add cumin seeds sauté until it starts spluttering
  • Make sure heat is not on high flame as there might be a chance of cumin getting burnt in that case
  • Add roughly chopped onion and sauté on a low medium heat for about 1-2 minutes until onions gets translucent and pink in color, once oil starts separating add garlic and ginger paste give a good mix and sauté for 1 more minute
  • Add chopped tomato cans, add turmeric powder, red chili powder, salt, freedom spice blend, give a good mix and cook for 2,3 minutes
  • At this stage cover it with a lid as tomatoes might splash everywhere
  • After 3 minutes add ghee or butter ,sugar cook for further until everything is cooked and the oil separates completely
  • Once done let it cool down for about 10- 15 minutes then blend it in a blender to achieve a smooth sauce
  • Pre heat oven 220 degree
  • Cut cabbage in half through core and cut each half through core into 6 wedges, don’t worry if they fall apart
  • In same cast iron pan add prepared tomato sauce , add cabbage to the skillet arrange them into tomato sauce unevenly making sure you fit every single cabbage cuts . You can sprinkle cheese  but I like to drizzle ghee on top of cabbage leaves to keep them moist while baking
  • Bake uncovered at 180 degree for 10-15 minutes until cabbage turns soft and edges starts becoming charred.
  • Once done drizzle avocado oil on baked cabbage, sprinkle freshly grounded black pepper and serve it with rice or any bread

Notes:

  • You can choose to add carrots, pumpkin to the recipe
  • I love to serve it with coconut cream
  • You can add broccoli, Tofu if you want
