Baked Breakfast Banana Oatmeal

Rolled Oats – 1 cup

Chia seeds – 1/3 cup

Flaxseed’s powder- 1/4 cup

Jaggery powder- 1/3 cup. You can use any sugar form, but I prefer Jaggery or Maple Syrup

Cardamom powder- 1/2 tsp

Walnuts – handful

Banana, l- 2

Coconut milk – 1 1/2 cup

This healthy banana oatmeal recipe is one of the easiest and most delicious breakfasts you will ever make. It is such an easy recipe that even your kids will enjoy making this for you. Simple ingredients, and cosy flavours that you will love this winter. You can substitute any pantry items available. I love experimenting new dishes using ingredients in pantry, a satisfaction I have keeping my stock level fresh while constantly using them in cooking!

Preheat oven to 160 C and grease the baking dish with coconut oil or baking spray

Mix all the ingredients in a bowl

Transfer the mixed ingredients into the baking dish, lengthwise sliced banana on top layer as ell and sprinkle jaggery powder to get the caramelised look.

You can use maple syrup or any solid sugar however I like my healthier alternatives.

Bake for 180 C for 10-12 minutes and serves this with your favourite coconut cream and enjoy!



Another tip for this recipe is you can have it prepared ahead and refrigerated before baking.
