Avocado Potato Salad

Ingredients:

8, 10 baby potatoes(boiled)

1  large Avocado (soft)

1/2 Avocado for extra topping

1/3 cup garlic chives

2 tablespoon chives (chopped)

1 tablespoon Dish delicious Blend(Mons flavors)

1 cup coriander leaves

4 tablespoon garlic infused avocado oil /olive oil

Salt and pepper to taste

Juice of one lemon

Sesame oil and chili oil for garnish

This recipe makes a fantastic side or main dish for all seasons. Adding dish delicious blend gives you the ability to create something extraordinary in your kitchen without putting too much of efforts. 

Method:

Place pot over medium high heat bring water to boil, add potatoes with 1/2 teaspoon of salt cook until done.

Check with the help of inserting a knife in the center of potato if they are cooked make sure they are not over cooked as potatoes might fall apart in the salad.

Once cooked drain potatoes and keep aside

In a blender, combine avocado, avocado oil or olive oil , garlic chives, salt and pepper, lemon juice , dish delicious spice blend, coriander leaves , blend until smooth, you can adjust oil according to your own preference. I like bit thick consistency and used garlic infused avocado oil instead olive oil but you can choose ordinary avocado or olive oil instead.

Pour  dressing over the potatoes , make sure use light hands to fold in the dressing .

Add fresh chopped thyme,  taste and adjust seasoning, toss to combine.

Sprinkle some sesame seeds and drizzle some chili oil while serving

Notes:

  • Make sure don’t over cook potatoes as they might fall apart when plating or tossing
  • If you want bit crunchy texture dressing then add 1/3 cup of  almonds or pine nuts while blending or just add while tossing in the end.
  • You can add fresh asparagus, red onions as well. Recipe says 1tablespoon spice blend but you can choose to add more for extra flavors.
