Asparagus potato Tart

500 Grams potatoes

1 Bunch asparagus(bottom trimmed)

5 Cherry tomatoes

4 Eggs

1 Teaspoon turmeric powder

2 Teaspoon Garam masala Mons flavors spice blend

1 Tablespoon Thyme chopped

1 Tablespoon Garlic chives chopped

1/4 Teaspoon black pepper

1 Tablespoon fennel leaves chopped

1 Teaspoon lemon juice

2 Tablespoon olive oil

Salt to taste

Extra Avocado oil to drizzle


3 Cups flour

2 Tablespoon Butter (melted)or olive oil

1/3 Cup Soymilk (chilled)

Pinch salt

Or use ready made flaky puff pastry dough



In a medium size bowl sift flour and salt together, pour melting butter or oil use your fingertips to rub the butter into the flour until the mixture looks like crumbs. Add chilled milk and mix it until it forms a dough ball. Make a ball, wrap in a cling foil and keep it aside for 15 minutes

Pre heat the oven at 240 Degree

Mean while boil potatoes on low medium heat until done, once done cut into small slices and leave on side

Roll out the pastry dough on a lightly floured surface and make a flat round shape

Use 8- 1/2 inch tart pan with a removal bottom, its easy to take tart out from the tray

Place your pastry dough on the tart tray and push it right into the corners,

Prick the pastry with the fork on and bake it in the oven for 10 minutes, remove it from oven drizzle some oil in the bottom of the tart , arrange potato slices, asparagus, cherry tomatoes in layers

In a bowl add eggs, thyme, fennel leaves, chives, turmeric, garam masala, lemon juice, salt whisk it well

Pour egg mixture on top of vegetables, sprinkle some fresh herbs and seeds of your choice

Bake for 20minutes until potatoes turn golden brown and gets set

Drizzle avocado oil on top of the tart and sesame seeds for extra flavors

Serve warm with some salad greens and chutney of your choice
